Winter weather has got me craving constant bowls of chocolate self-saucing pudding and copious amounts of tea. But, since woman does not live on pudding alone, I’ve got a few more healthy options on rotation. I’ve rounded up my favourite winter recipes, in case you too are looking for something scrummy.
Spicy Chipotle Honey Salmon Bowls – Half-baked Harvest
Every. Single. Friday. In the words of Half-baked Harvest queen, Tieghan, these are so delicious. I love the salmon bowl, although I do tweak the dressing a little to meet our spicy tolerances. The great thing about this one is you can swap in different fish or veg to this and it still works. Healthy, flavourful and so comforting, this one gives chocolate pudding a run for its money.
Butter chicken, sans chicken – one of my own recipes
Cost of living, amiright? Jokes aside, it is great for the budget to have a few more veggie recipes on rotation through the week. I love a hot bowl of butter chicken and rice of an evening. I whip this one up with lentils, chickpeas and green beans with this sauce, tinned tomatoes and some coconut cream. Throw it on rice and you’re good to go. I promise no one will even notice the chicken is missing.
Spaghetti bolognese – use your favourite
Everyone has their one bolognese recipe. Suggesting it as a comfort food for winter is about as ground-breaking as pastels for spring. But, it’s so great. It’s always a winner, it’s easy to pull together and I haven’t met anyone who doesn’t like it. For extra flavour, throw in a lamb shank and let it slowly cook all it’s glorious flavour into the sauce. Drown in cheese and enjoy!
